Esmeralda's not my fave character, tho a lot of ppl still like her, & I couldn't leave her out of my Disney Heroines album, so here she is. I actually once had a Barbie doll of Esmeralda (b/c I was like 9 or 10 when the movie came out) in her purple & green gypsy dress. (I was only allowed 1 doll, & I had to choose b/w the red dancing dress & the purple one). The white dress is what she wore when she was almost burned at the stake, & Quasimodo rescued her.

The last dress was something of my own design. It's what she might have worn [realistically] if she'd married Phoebus. It's based on Medieval ideals of marriage. From what I read, "The Hunchback of Notre Dame" takes place in 15th century France, which is in the late Middle Ages.
To marry Phoebus, the 2 of them would have had the ceremony in the church & then Esmeralda would have joined his household. There was no standard set of colors for the bride & groom to wear at weddings in those days (the white gown/black tux thing was started by Queen Victoria), although in some parts of Europe, pale blue was worn as a sign of virginity. Finally, the design is based on what French medieval peasant women wore in the 15th century, or at least as close as I can get it.
Chances are, Disney would have slapped a crazy white gypsy dress onto Esmeralda (w/ some extra color thrown in) & had yet another huge party in the streets for the couple.
